Not the smallest letter, not the least stroke of a pen

Matthew 5:17 “Do not think that I have come to abolish the Law or the Prophets; I have not come to abolish them but to fulfill them. 18 For truly I tell you, until heaven and earth disappear, not the smallest letter, not the least stroke of a pen, will by any means disappear from the Law until everything is accomplished.
Mark 7:19 For it doesn’t go into their heart but into their stomach, and then out of the body.” (In saying this, Jesus declared all foods clean.)
Now that all foods are clean, doesn't that mean some letters and strokes of the pen disappeared from the law? Does that mean that dietary laws were not what Jesus was talking about? Or does that mean everything is accomplished? Or is there a third (or fourth, etc.) option?
